“The king’s food”

Alkaki Recipe….By Salwise’s kitchen

Ingredients..

2 cups of crushed wheat

1 cup of cow-milk

4 tablespoonful of vegetable oil

1 cup of sugar

1 teaspoon of lime juice.


Method

Mix crushed wheat with vegitable oil, add cow-milk gradually,then knead to form a thick dough.
Cover tightly and keep for 3hrs,after which it will get soft.

Put the dough in a mortar and pound well,at SALWISE we use traditional grinding stone, rather than mortor , add little water until very soft.Rub your hand with oil,take like 2-3 tablespoon out of the dough and roll it on grinding stone or on stainless steel ,make it into any shape of your choice.
Heat the vegetable oil, put in your alkaki and fry in a low heat until golden brown.

For the syrup..

Mix ur sugar and water(don’t add too much water) Boil until it becomes thick, add lime juice stir and remove from heat.

Note: you  can substitute sugar with Honey
****Alkaki can stay as long as a year without going bad.
