Sweet potato porridge with spinach is a delicious and nutritious dish that’s perfect for a hearty breakfast or a light meal. This combination not only provides a range of vitamins and minerals but also offers a satisfying texture and flavor. Here’s a simple guide to preparing this wholesome dish.
Ingredients:
2 medium sweet potatoes
fresh spinach leaves
1/2 cup rolled oats or millet (optional for added texture)
3 cups water or vegetable broth
1 tablespoon olive oil or butter
1 small onion, finely chopped
2 cloves garlic, minced
Salt and pepper to taste
1 tablespoon lemon juice (optional)
Fresh herbs for garnish (such as parsley or cilantro)
Peel and cube the sweet potatoes into small pieces. This will ensure they cook evenly and blend smoothly into the porridge.
bring 3 cups of water or vegetable broth to a boil. Add the sweet potato cubes and cook until tender, about 10-15 minutes.
Prepare the Spinach:
Wash and roughly chop the leaves.
In a separate pan, heat the olive oil or butter over medium heat. Add the chopped onion ,blended tomatoes and pepper and cook for about 5 minutes.
Add the minced garlic and cook for another 1-2 minutes, until fragrant.
Combine Ingredients then add to the sweet potatoes. Stir well to combine.
If using rolled oats or millet, add them to the mixture and cook for an additional 5-10 minutes, stirring occasionally, until they are cooked through and the porridge has thickened.
Stir in the spinach and cook for another 2-3 minutes until the spinach is wilted and incorporated.
For a touch of brightness, add a tablespoon of lemon juice if desired.

Serve the porridge hot, garnished with fresh herbs if desired.
